-8/ oz. mushrooms, sliced Asparagus
-Shredded mozzarella Feta-Italian bread (2 slices per sandwich)
-Olive oil
-Kosher salt-pesto (homemade)
making:
2-Cut pepper and onion into strips, and asparagus in half.3-On a baking sheet, toss veggies with olive oil and kosher salt.4-Roast for about 30 minutes.5-On a skillet over medium heat, place a slice of bread. scatter mozzarella and feta.6-Add a generous layer of vegetables. Spread pesto on a second slice of bread and place on top, lightly pressing down.7-Heat it on each side until warmed through and cheese is melted (about 6 to 8 minutes).
