ingredients:
-1.6 kg/ chicken cut into pieces
-1/ preserved lemon
-the juice of two lemons
-1/ bunch spring onions
-20 cl/ chicken stock
-5 c/ tablespoons olive oil
-3/ sage leaves
-1/ sprig thyme
-salt pepper
making:
1-Salt and pepper the chicken pieces. Place them in a bowl.
2-Mix the lemon juice with 2 tbsp. tablespoons olive oil. Brush with chicken pieces using a brush.
3-Cover the dish with plastic wrap and marinate in the fridge for 12 hours.
4-Peel the onions.
5-Heat the remaining olive oil in a casserole.
6-Brown the chicken pieces for about ten minutes. Remove them from the pan and add the onions.
7-fry it for 5 minutes without being stained.
8-Add the chicken pieces and sage and thyme to the pan . Cook covered over low heat for 30 minutes.
9-Cut the candied lemon into slices. Add it to the pan.
10-Add salt and pepper and cook covered for 30 minutes.
11-Mix well and serve hot with rice or pasta.
